Clear, smooth, effortless
Bao Buns with prawns, green asparagus and red pepper


Buns:
125 g flour (Type 405)
5 g yeast
5 g sugar
50 ml lukewarm water
20 ml coconut milk
5 ml oil
¼ tsp salt
Fillings (to be steamed):
8 prawns
8 stalks green asparagus
1 pepper
Pickled vegetables:
1 carrot
1/8 radish
some salt
1.5 tbsp sugar
75 ml rice vinegar
75 ml water
Sauce:
200 g mayonnaise
1 tbsp Sriracha sauce
1 tsp lime juice
Topping:
Cilantro or Thai basil
1. Prepare a smooth yeast dough from the ingredients and let it rise, covered, in a warm place for at least 40 minutes.
2. In the meantime, prepare the sauce and the pickled vegetables.
3. Sauce: mix all ingredients and then chill.
4. Pickled vegetables: cut the carrot and radish into fine strips and knead with a little salt until soft. Add sugar, rice vinegar, and water. Let rest.
5. After 40 minutes, knead the dough again and divide it into 4 equal-sized balls. Let these rise for 15 minutes.
6. In the meantime, cut pepper into stripes and peel the asparagus.
7. Roll the balls into thin circles or ovals, and fold them together in the middle. Place baking paper in between.
8. Place buns, pepper, asparagus and frozen prawns on the steam basket.
9. Steam everything as indicated below.
10. Take the steamed ingredients out of the drawer.
11. Garnish each bun with a bit of mayonnaise, 1-2 prawns, 1-2 stalks of asparagus, 1-2 strips of pepper, some pickled vegetables, and cilantro or Thai basil.
