Pork Medallions with Creamy sauce Recipe

Serves: 4 | VarioSpeed Cook: 4D HotAir with Microwave 170°C/360Watts 15 Minutes. | Microwave 600 watts 5 minutes | Microwave 900watts 2 minutes.

Ingredients

  • 8 pork tenderloin medallions
  • 1 tbsp oil
  • 2 eating apples peeled and sliced
  • 2 leeks washed and sliced
  • 1 onion peeled and finely sliced
  • 150ml Apple juice
  • ½ tsp dried sage
  • Salt and pepper.
  • Sauce
  • 2 tbsp Low fat Creme Fraiche
  • 1tsp cornflour

Method

1. On the hob heat the oil in frying pan and brown all sides of the pork for 2-3 minutes.

2. In an ovenproof dish place the sliced leeks, onions and apple. Put into the oven, select Microwave and cook at 600 watts for 5 minutes.

3. Once this has finished, place the pork on top and sprinkle with sage, salt and pepper, then pour over apple juice.

4. Set oven to Microwave combination Hot air grilling 170C with 360 watts and place pork casserole inside. Cook for 15 minutes.

5. Blend the cornflour and crème fraiche to smooth paste.

6. Remove the pork and strained vegetables to a hot serving dish, leaving the liquid in the cooking pot.

7. Add the crème fraiche mixture to liquid in the pot. Stir well. Return to the oven and heat on pure microwave 900 Watts for 2 minutes to cook and thicken sauce.

8. Serve sauce poured over pork.
