Rhubarb Brioche Pudding Recipe

Combining the classic flavours of rhubarb and custard in a single pudding - tangy, creamy, delicious.

Serves: 4-6 | Cooking Function: 4D hotAir with microwave 180°C/180 watts for 10 minutes, hotAir Grilling for 5 minutes, varioSpeed Pure Microwave 600 watts for 5 minutes.

Ingredients

  • 200g rhubarb
  • 55g caster sugar
  • 10 -12 slices of brioche
  • 600ml luxury custard
  • 1 egg
  • 55g demerara sugar

Method

1. Wash and slice rhubarb into 2cm pieces place in an oven proof dish and sprinkle with caster sugar. Cover dish with microwaveable cling film lifting back one corner.

2. Select Microwave 600 Watts and cook for 3-4 minutes, stir well and cook for further 2 minutes if required.

3. In a large oblong dish layer Brioche slices with rhubarb, pour over custard and cook in microwave combination 4D hotAir and Microwave for 10 minutes.

4. Remove from oven sprinkle with demerara sugar and return to oven for 5 minutes on Hot air grilling to get a crisp topping.
