Warming red cabbage, leek and kale.

Beautifully coloured seasonal vegetables take centre-stage in this side dish. A perfect accompaniment to a roast dinner and even your special Christmas Day meal. Fragrant and flavourful, you will be pleasantly surprised with your cabbages and greens.

Serves: 6-8 | Cooking Function: induction hob level 5 | Prep: 10 minutes

Ingredients

½ red cabbage finely sliced

1 leek sliced thinly

½ bag of kale

1 eating apple

10cm of root ginger peeled

1 tbsp olive oil

Salt & pepper

2 tsps balsamic vinegar

2 tbsps orange juice

Method

 

1. Finely slice the red cabbage, then wash. Slice the leek then wash.

2. Remove the hard stems from the kale and wash. Slice the apple and ginger into fine strips.

3. Place the wok pan on the induction hob level 8 with the oil then reduce to level 5.

4. Add the red cabbage and leek, stirring all the time. Add the ginger and apple, and season with salt and pepper.

5. Once the cabbage and leek is al dente, add the kale, orange juice and balsamic vinegar.

6. Cover and allow to steam for 1-2 minutes.

7. Adjust seasoning and serve.
