The correct water temperature during brewing impacts flavour and extraction, allowing the Espresso’s rich, full aroma to be released. The brewing temperature should be between 90 °C and 95 °C. If the temperature is too low, the flavour will be restricted, too high and the coffee will taste bitter and burnt.
The time water is in contact with coffee grinds is the major component impacting extraction and flavour. A too long brewing time results in a flat, bitter Espresso, too short equals an overpowering, concentrated Espresso. The required brewing time also has an impact on determining coffee grind size.
The basics behind making Espresso coffee are quite simple, forcing hot water under high pressure through a compacted bed of finely ground coffee. Controlling the correct amount of pressure is crucial to create a perfect Espresso. The pressure is generated in various ways depending on the espresso machine, by a lever, piston, steam power, motor-driven pump, a rotary pump or a vibration pump generating pressure only as the shot is being pulled.
A very short science lesson – pressure is the force exerted by the atmosphere, that is, the weight of air at sea level. The pressure in an espresso machine is managed by forming a “puck”, with a uniform surface area, to offer resistance to the water as it is pushed through the coffee grounds.
