A simple to make recipe for the classic and zesty drizzle cake - sweet, sharp and delicious.

Ingredients
- 175g softened butter
- 175g caster sugar
- 3 eggs
- 100g self raising flour
- 1tsp baking powder
- Zest of 1 lemon and 1 lime
For the Drizzle
- Juice of lemon and lime
- 55g caster sugar

Method
1. Grease a 20cm (8”) glass souffle dish or dark metal tin.
2. Place all the cake ingredients in a bowl and beat with an electric mixer for 2-3 minutes until thoroughly mixed in.
3. Spread in the prepared dish or tin, smoothing the top and bake at 4D hotAir 180°C/180 watts microwave for 18 minutes.
4. While still warm spike the cake and drizzle over the juice of a lemon and lime mixed with 55g of sugar which have been dissolved together. Reserve a little of the zest to decorate.
Tip:
When cooked in combination the cake should still look slightly moist on top when the microwave time has ended as it continues to cook during the standing time. If it looks fully cooked it will be dry when cool.
